Colchester Brewing Company was formed on September 12, 2006.  The founder and president, Jared Thompson, was given a homebrew beginner's kit on this day (his birthday).  Little did he know that this gift would transform into a fun and rewarding hobby.  After several batches of mediocre homebrew, it was soon time to hit the books.  Immersing himself in various books and magazines that explained the history and process of making beer, it was now time to take it to the next level.

During the course of the next year, the emphasis was placed on recreating existing styles of beer, as opposed to experimenting with new styles.  This proved to be successful.  With a new understanding of what makes a great beer, the brewery was now pumping out more styles than ever, all of them instant hits amongst family and friends.  But soon the brewery ran into problems with supply and demand.  Within the course of the next few months, it expanded.

From the humble beginnings of brewing partial batches with malt extract on the stovetop, the brewery was now producing all-grain batches with dedicated equipment, including a kegerator that can serve two beers simultaneously.  The brewery is currently more busy than ever; on a quest to find some unknown ingredient or long-forgotten technique in order to produce some of the best beer ever.
